Rasmus Munk

Rasmus Munk is the visionary chef behind Copenhagen’s Alchemist, where he fuses gastronomy, theatre, and social commentary into a transformative dining experience. Known for his boundary-pushing ‘Holistic Cuisine’, Rasmus has redefined fine dining, earning two Michelin stars and global acclaim for his culinary art and visionary storytelling.

Rasmus Munk is the visionary chef behind Copenhagen’s Alchemist, a restaurant that has redefined the boundaries of fine dining. At Alchemist, guests experience a multi-sensory journey that fuses gastronomy with theatre, technology, and provocative social commentary. The restaurant’s immersive 50-course tasting menu explores themes such as climate change, food insecurity, and ethical consumption – transforming each dish into both a culinary and conceptual experience.

After early culinary experiences, including a stint at London’s Michelin-starred North Road and leading TreeTop in Vejle at just 22, Munk opened the first iteration of Alchemist in Copenhagen in 2015. The intimate venue quickly became known for its bold experimentation and theatrical flair. In 2019, he unveiled a radically expanded version of Alchemist in a repurposed shipyard, cementing his reputation as one of the most original voices in contemporary cuisine.

Munk’s unique approach, which he terms “Holistic Cuisine,” has earned Alchemist two Michelin stars and a place among the World’s 50 Best Restaurants. Beyond the kitchen, he co-founded JunkFood, a non-profit feeding people experiencing homelessness, and launched Spora, a sustainability-focused food lab.

With Alchemist as his platform, Munk transforms dining into dialogue – and food into a force for change.

In this episode of the Pearl Lam Podcast, Rasmus Munk and  Pearl Lam sit for a conversation that goes far beyond food. Rasmus opens up about his journey from traditional kitchens to creating one of the most radical and immersive dining experiences in the world.

Pearl and Rasmus also delve into the deeper questions driving his work: What role can chefs play in shaping cultural narratives? How can dining become a catalyst for change? And where does gastronomy end and performance art begin?
